Since I’ve moved to a new apartment, I’ve been a kind of a lazy cooker. But yesterday, spontaneously, I was motivated to create something special! Since I had a lot of eggs in the fridge, I decided to make mille-feuille omelette :)
I eyeballed everything so it’s more or less but here are the ingredients I used.
a)
1/3 rosred pepper (ローストしたパプリカ1/3個分)
2 Tbsp boiled broccoli (下湯でしたブロッコリー大さじ2)
b)
1 Tbsp green onion (青ネギ大さじ1)
3 Tbsp Cheese (チーズ大さじ3)
1 tsp thyme (タイム小さじ1)
c)
1 small tomato (小さめのトマト1個)
1 tsp dried basil (I couldn’t get it fresh :( )
2 Tbsp black olives (ブラックオリーブ大さじ2)
Black pepper to taste
1/2 caramelized onion (飴色に炒めたタマネギ1/2個分)
1 Tbsp green onion (青ネギ大さじ1)
Salt to taste (お好みでお塩を加えて下さい)
Oil or butter for cooking the omelet
1)Make 5 different egg mixtures. You should mince the all ingredients to a very small size. It makes it easier to cook the eggs.
2)Make a thin egg crepe :) Pour the oil in the pan and cook the egg on medium-low heat. I used a small pan so I made 3 to 4 crepes from each egg mixture.
3)Pile them up and cut to your favorite size :) Enjoy!
Once they are piled up high, they looks so cute :)
When I was a kid, my grandmother taught me how to cook thin egg crepes. I feel like she said add a touch of potato starch for the egg to prevent it from tearing but I wonder if I’m remembering correctly…

That looks so good! And easy too!
